It never occurred to me until the day after last week’s Thanksgiving day celebration that I’m not the huge fan of turkey that I thought I was. I guess I never truly focused on the taste of turkey meat before, instead letting the celebratory spirit of the holiday and the tons of gravy poured over the turkey cloud my true feelings for turkey meat.
Turkey soup, on the other hand, I’ve grown to love to the extreme. And this year’s turkey soup was the best I’ve ever had.
Turkey soup with brown rice, carrots, celery, and kimchi for breakfast. That’s yum right there. Have to say that the kimchi just makes all the difference in the world.

Turkey soup with sides of kimchi and mashed potatoes with gravy for lunch. The turkey meat having been cooked again in the soup made it definitely taste better.

I don’t remember off hand what dinner was, but we made sure that it was light. The following morning, Wifey prepared a hearty breakfast for us.
Mushrooms with chives, scrambled eggs, tomatoes, and bacon. What a treat to have real bacon. Ohhhh… Never had much chives before, but I loved the chopped up chives on the mushrooms. For the record, the food below was split among three people, and I ate my share with brown rice.

Several days later, Wifey roasted up some beets to accompany one of our meals. We all loved them. Just a wonderful, smooth taste to these beets.

Now, Wifey has been sick with a cold for quite a while, which is uncharacteristic of her. Yet, she’s cooked and prepared meals for us. I haven’t cooked a meal since I made those very simple, basic crepes over two-and-a-half weeks ago. Just criminal. Come on! Gotta step up!
Always Grateful,
~Hubby
