Kimchi Fried Rice

Wifey recently declared, “I want kimchi bokkum bap.” I said, “That sounds great!” and thought, “God, I love this person!”

Ingredients:

  • Olive oil (we used a Misto spray bottle to lightly coat the pan)
  • 2 cups cooked brown rice
  • 1 cup kimchi with liquid
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tbsp sesame oil
  • 1 tbsp toasted sesame seeds

Directions:

  • Heat a wok or pan and then lightly coat it with olive oil.
  • Add the rice and fry it for about 2-3 minutes.
  • Add kimchi with liquid and cook for about 5-8 minutes.
  • Add soy sauce, vinegar, sesame oil, and sesame seeds.

Note: We kept our meal extremely simple, but basically anything can be added to this dish, such as chopped garlic, onions, green onions, mushrooms, a protein source like chicken, gochujang sauce, etc.

Wifey and I prepared this dish together, and cooking together was enjoyable and so much fun. From now on, whenever possible, I’ll cook with wifey. I know I’ll be learning so much.

Kimchi Jjigae and Rice in Seaweed

We’ve been visiting my parents more often lately. The toddler seems to really enjoy his grandparents these days. Whenever he goes there, he definitely gets his fill of rice.

The above pictures are what us adults ate for dinner: brown rice, kimchi jjigae, bulgogi, and sauteed mushrooms.

The toddler enjoys eating rice wrapped in seaweed. This time around, we tried sneaking in some bulgogi in the rice, but he would have none of that. In fact, he started inspecting each of the seaweed wraps, as shown in the above pic.

There’s the toddler peeling mandarins again. Check out the concentration! And once again, I was the main beneficiary of the peeled mandarins. They were sweet and juicy!

Kimchi Jjigae

Wifey makes awesome kimchi jjigae. She made some recently with organic chicken instead of the pork ribs that often go in the jjigae. I swear, I really didn’t think that the kimchi jjigae this time around would be so good, mainly because I assumed that the kimchi was too ripe. That jar of kimchi seemed to be in our fridge for a very long time. I just forgot about it. And when I finally spotted the jar, I told wifey that I was going to toss the jar in the trash, but she knew that it would be fine for making kimchi jjigae with it.

This begs the question, can kimchi ever get too ripe for kimchi jjigae?

This is my plate with the brown rice and other grains along with the last remaining bul gogi and mandu from the previous post.

I’m so glad that I asked wifey about that kimchi jar. If I hadn’t, I most likely would have thrown it away.

Bul Gogi, Potstickers, and Brown Rice

We recently visited my parents as the toddler seems to really enjoy hanging out at his grandparents’ place these days. My mom prepared some food, but wifey and I didn’t really eat much. I think there was some miscommunication there. So since there were leftovers, we took some of the food home.

Wifey left the bul gogi and the potstickers (AKA “mandu“) for me as she wasn’t in the mood for them, and I helped myself to quite a hearty meal.

Doing the Sae Bae

I hinted in the last post that even though we were a day late in doing some sae bae in front of my parents, I’m sure that they most likely forgave us quickly, especially after the toddler’s sae bae performance. I’ll let the following pictures do the talking.

Honestly, I don’t think that anyone imagined just how awesome he would be in doing sae bae. Could he have possibly remembered doing sae bae from a year ago when we all did it? Not possible, but the toddler literally just plopped down right beside me and just started doing the bowing thing without any instruction. Then he did it again with wifey. Not surprising, there were definitely lots of smiles and laughter going on.
